A Vail Family Legacy
THE SIXTY TWO™ Society is the vision of Brad Kaemmer, a second-generation restaurateur with a career spanning over 30 years. John and Julie Kaemmer, Brad’s parents, arrived in Vail in the mid-1960s and opened the London Bar and Grille (later The Clock Tower Inn), setting a new standard for quality dining.
Brad considers it a privilege to build upon his family’s legacy in the same place they loved the most. An accomplished hospitality executive and sommelier, Brad was born and raised in Vail and is working in concert with the local community in bringing THE SIXTY TWO™ Society and THE SIXTY TWO™ Restaurant to fruition.
In 1962, on December 15th at 9 a.m., Colorado’s newest ski area opened with two chairlifts and the four-person Bell Gondola, the first gondola in the state. Eight runs covered six square miles of terrain, and lift tickets were $5. It didn’t take long for shops and restaurants to follow, and in 1966, the Town of Vail was officially incorporated.

With more than four decades of culinary leadership, Chef Mark Adair brings a global perspective shaped by classical training in France and Switzerland and decades of innovation across luxury hospitality and nationally recognized restaurant groups. His leadership helped guide brands such as Fleming’s Prime Steakhouse & Wine Bar and Bonefish Grill, and his work with Japan Airlines’ Ihilani Resort & Spa in Hawaii contributed to the property’s recognition for world-class dining and service.
A Certified Executive Chef and Master Butcher, Mark blends technical mastery with mentorship and purpose. At THE SIXTY TWO™ Society, his vision is to create experiences that are both globally inspired and unmistakably rooted in Vail’s legacy of hospitality.
Nicolas Ferreira
Chef de Cuisine
With more than two decades of experience in some of the world’s most acclaimed kitchens, Chef Nicolas Ferreira brings Michelin-starred precision and creative artistry to THE SIXTY TWO™ Society. His career includes over a decade with the Thomas Keller Restaurant Group (The French Laundry, Per Se), earning one Michelin star as Executive Chef of Angler San Francisco and recognition as a James Beard Award finalist and Food Network, Chopped Champion.
Ferreira has also collaborated with celebrated institutions including
Quince & Co., Tantris (Germany),
Taillevent
(France), and the
Ferran Adrià Foundation, as well as large-scale culinary events from
Super Bowl XLVIII to the
Tribeca Film Festival. His approach to alpine dining combines integrity, innovation, and a deep respect for craft — redefining what culinary excellence means in Vail.
